The individual parcels of each variety, from each plot, were destemmed and given a warm, plunged fermentation with extended maceration on skins. The resulting wines were run off to a mixture of new and seasoned French oak barrels for 19 months’ maturation. The barrels were regularly topped and racked before blending and egg white fining prior to bottling. The final blend is 46% merlot, 23% cabernet sauvignon, 17% cabernet franc, and 14% petit verdot.

Estate Vineyards Merlot/Cabernets ’11 has a bright crimson colour, with characters of plum, blackberry and apple compote, and an attractive cinnamon spice and bay leaf background. The classically structured palate shows sweet, ripe fruit flavours in great balance, with fine, dry tannin, leading to a supple, even finish.

The grapes for Estate Vineyards Merlot/Cabernets ’11 were harvested between 27 March and 23 April 2011 from Te Mata Estate’s own vineyards in the Bridge Pa Triangle, Havelock Hills and Woodthorpe Terraces sub-regions of Hawke’s Bay.
