The grapes were destemmed and crushed, drained, cold settled, then all fermented and aged in barrel until November when the finished wine was bottled.

1999 Cape Crest has a light lemon green colour, a pronounced aroma of feijoa, lime and fennel and the pouilly-fumé ‘gunflint’ character. The palate carries through the ripe fruit flavours and is crisp and dry. 1999 Cape Crest Sauvignon Blanc has the potential to develop and intensify in bottle for 2-4 years from harvest.
Served cool it is an ideal partner for seafood, white meat and Chinese food, as well as being a lovely aperitif.

Cape Crest and its gannet symbol refer to Cape Kidnappers, the southern point of Hawke Bay, home to the world’s largest mainland colony of these remarkable marine birds.
The fruit for ’99 Cape Crest was hand harvested between the 8th and the 13th March 1999.
