The grapes were destemmed, crushed, cold drained and settled, and then half the juice was fermented in new and older barrels and the remainder in tank. Following barrel ageing and final blending the wine was bottled in late September.

Cape Crest Sauvignon Blanc 1995 has a golden, green colour, an aroma of citrus fruits and herbs such as fennel and cardamom, and a ripe, rich palate of gooseberry and melon. Cape Crest Sauvignon Blanc 1995 is an ideal accompaniment to smoked seafoods and meats, as well as the more mildly spiced Asian foods. It has the ability to develop in bottle for one to three years.

The hand harvested grapes for Cape Crest Sauvignon Blanc 1995 came into the winery at the end of March.
