Following destemming and crushing, the wine was cold drained and settled. One third of the juice was barrel fermented in new and one year old oak; the remainder was fermented in stainless steel. The wine was bottled in late September.

1994 Cape Crest Sauvignon Blanc has a green gold colour, an aroma of spice, cedar and fennel, and a broad, soft flavour of figs and integrated smoky oak. It has the development potential of 12-36 months from harvest. It best accompanies savoury and spicy foods, with gentle Asian influences, plus well seasoned seafood, poultry and white meats.

1994 Cape Crest Sauvignon Blanc was hand harvested in mid April.
