The grapes are destemmed and crushed, the juice is drained, settled and then one-third is fermented in a mixture of new and older oak barrels. The remainder is fermented in stainless steel. The wine was blended and bottled in early October.

Cape Crest Sauvignon Blanc 1993 is a dry white wine with a golden/green colour, an aroma of figs, smoke and vanilla, and a full crisp palate with flavours of toast. It will be at its peak at between one and three years from harvest.

1993 Cape Crest Sauvignon Blanc is made from hand-harvested grapes off a 4 acre vineyard at Te Awanga, the nearest settlement to Cape Kidnappers.
