Hand harvesting takes place in mid-April; some of the fruit is then crushed and drained while the balance is whole cluster pressed. Two-thirds of the juice is cold tank fermented; the remaining one-third is fermented in a mixture of new and older French oak. Following racking and ageing the components are blended prior to bottling in early October.

1992 Cape Crest Sauvignon Blanc has an aroma of nectarines and herbs, and a long, slightly smoky, dry finish. It will develop in bottle for 1-4 years from harvest. The breadth of flavour of this wine enables it to partner smoked fish and delicatessen foods, as well as white meats in creamy sauces.

Cape Crest and its gannet symbol refer to Cape Kidnappers, the southern point of Hawke Bay, home to the world’s largest mainland colony of these remarkable marine birds.
Cape Crest is a small vineyard of 3.5 acres just inland from Te Awanga on the Hakwes Bay coast in the direction of Cape Kidnappers.
