The individual parcels of each variety, from each plot, were destemmed and given a warm, plunged fermentation with extended maceration on skins. The resulting wines were run off to a mixture of new and seasoned French oak barrels for 19 months’ maturation. The barrels were regularly topped and racked before blending and egg white fining prior to bottling. The final blend is 46% merlot, 23% cabernet sauvignon, 17% cabernet franc, and 14% petit verdot.

Estate Vineyards Merlot/Cabernets ’10 has a dark ruby colour with aromas of fresh blackberry, plum, sage and vanilla. The palate is layered and soft, showing very ripe plum and berry notes intermixed with fine chocolatey tannins that sustain the long finish.

All Te Mata Estate wines are grown in the same vineyards, made by the same people, and are all bottled onsite at the winery established in 1896. Estate wines are varietally-driven, representing the finest expression of Te Mata’s Hawke’s Bay vineyard sites.
