Following destemming, crushing and cold settling all the juice was transferred to barrels for fermentation and then ageing on lees. After several months the wine was blended and bottled in mid November.

Cape Crest Sauvignon Blanc 1997 has a light green-gold colour, an aroma of lime and olives with a ripe, long palate showing integrated oak, lime and nectarine flavours, and a sustained, crisp finish. Cape Crest Sauvignon Blanc 1997 is an ideal accompaniment to seafood and poultry, and with age will develop an intense, rich character, reminiscent of a ‘white burgundy’ style.
It will improve in bottle for 15-36 months from harvest.

Cape Crest and its gannet symbol refer to Cape Kidnappers, the southern point of Hawke Bay, home to the world’s largest mainland colony of these remarkable marine birds.
Cape Crest Sauvignon Blanc 1997 was made from fruit hand harvested between the 3rd and the 24th April.
