After destemming, crushing and cold draining the grapes they were fermented in a blend of new and older 225 litre barrels. Following fermentation the wine aged in the same oak for a further four months and was then blended and bottled in early October.

Cape Crest Sauvignon Blanc 1996 has a golden-green colour, an aroma of smokey oak and melons, and a soft, rich palate of great length and flavours of pear and figs. Very impressive.
Cape Crest Sauvignon Blanc 1996 should be served cool and is a great partner to white meats and seafood where sauces, herbs and spices have been used in the cooking. It will intensify in colour and flavour in bottle for 1-3 years from harvest.

The grapes for Cape Crest Sauvignon Blanc 1996 were hand harvested between the 10th and the 13th of April.
