Tasting Notes 2004
2004 has produced the highest quality Sauvignon Blanc that Te Mata Estate has experienced.
Woodthorpe Sauvignon Blanc 2004 has a youthful, pale green colour with aromas and flavours of kiwifruit, fresh lime zest and passion fruit. It has a rich, juicy mid-palate, with a particularly fine texture and a long, crisp finish.
Woodthorpe Sauvignon Blanc 2004 is released ready to drink and will continue to improve in bottle for 1 – 2 years from harvest. It is best enjoyed chilled, either as a pre-dinner drink, or as an accompaniment to grilled vegetables, fresh and cooked seafood, as well as chicken and pork dishes prepared with a Pacific or Asian influence.

Winemaking
The selected grapes were gently handled at cool temperatures to release a crisp, clear juice. This juice was fermented to dryness in stainless steel tanks to retain the fresh fruit characters developed in the vineyard. The new wine was then racked off its fermentation lees before receiving three months maturation in tank. It was then fined before being bottled in August 2004.
